Ingredients:
- 2 medium eggplants, sliced into 1/2-inch rounds
- 1 tsp salt
- 1 cup flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella
- Fresh basil for garnish
Instructions:
- Salt and sit eggplant for 30 min. Rinse and dry.
- Bread the slices: flour → egg → seasoned breadcrumb mix.
- Bake at 425°F for 20–25 minutes, flipping halfway.
- Layer in a dish with marinara and cheese.
- Bake covered for 20 min, then uncovered for 10–15 until golden.
- Garnish with basil and serve hot. Buon appetito!
