Grilled Summer Squash Recipe

Ingredients:

  • 4 yellow squash or zucchini
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. Trim ends and quarter squash lengthwise into spears.
  2. Drizzle with olive oil and season with salt and pepper.
  3. Grill over medium heat for 3 minutes per side, or until tender and lightly charred.
  4. Add more seasoning to taste and serve warm.

Tips:

  • Use a grill basket for diced or sliced squash.
  • Swap in avocado oil or season with fresh herbs for variety.
  • Pair with grilled salmon or a watermelon lemon squash mocktail for a complete summer meal.
